Meet My Maple

Meet my Maple

I shall call her Akemi.

Akemi means bright and beautiful; red beauty.

Maples dont grow in my neck of the woods. Who am I kidding, what woods?!
The weather here is too hot and dry.

I ordered her from the East Coast and have babied her since I got her. Even put ice cubes around her base to cool her off. My neighbor makes fun of me and asks if I plan to install a portable ac unit.
We've been giving her some miracle grow and she is now about 3 feet tall. Stil very bare but she's getting taller. I love her red color. We dont get fall here and to see her leaves change color is beautiful.

I hope she survives, I hope to one day sit under her branches.

Happy Aloha Friday Everyone! Have a great weekend!

Am I gonna loose it?

Remember a few weeks ago when I posted about my attempt at handstamping here?
This is what my thumb looked like the next day.

It scared me pretty bad because I havent picked up a hammer since, not even to finish the ONE last piece of trim on my outdoor storage box.

This is what it looks like today.

It's getting pretty black under there.
Do you think I'm gonna loose my nail?

Two Tips For Happy Family Spaghetti

It was a spaghetti dinner night.
Thats my go to when I dont have time or a clue what to make.

This probably isnt news to most of you but I had to share.

Tip #1
Salt your water when you boil your noodles
yes it makes a difference

Tip #2
Whatever sauce you make weather it be from scratch or a can
 (tonight was a can night)
always add about 3/4 tsp of sugar. It balances out the acidity in the tomato sauce.

Ok, ok so its probably not a news flash, but my family just loved dinner tonight and I had to share.

Good night!

Symetrical Cupcakes & the BEST Frosting from scratch

Another long weekend. Only one more to go before the insanity ends.

This past weekend our dear friends came to visit from Cali.
Oh how we miss them and didnt want them to leave!

Friday was their daughter's first birthday and Sunday was Daddy's bday.
We hung out by the pool, grilled kalbi (korean short ribs) played with the kiddos and I made cupcakes... with homemade frosting :-)

I got the recepie from P-dub, one of my favorite places to get new recepies, and she calls this
I just have to say right now... I HAVE to Agree!!!

I started with just a regular box of devil's food cake mix.

I dispise randomly sized cupcakes. They drive me insane.
My trick is to use an ice cream scooper...

And you always are left with just the right amout of batter not to waste any and just enought to lick the bowl.

They're looking pretty symetrical to me.

Ok, now for the good stuff. The frosting. I am not a frosting person.
I usually scrape all the frosting off and only eat cake.
Frosting is usually too sweet, got a weird texture or has a bitter after taste to me.
This frosting however, will leave you wanting more!

So here is the recepie.

Start with milk and flour, yes flour.
I had to read it a few times as well thinking why would someone use flour in a frosting recepie?
Just trust me on this one.

Add a cup of milk to 5 tbsp of flour and cook on the stove until thick, very thick.

Once its completely cooled add 1 tsp of vanilla and mix well.

In another bowl beat 1 cup of butter with 1 cup of sugar with a mixer.
Hey I said the frosting was good not good for you.

Then add the flour mixture and mix well.
My mixture looks pink because I used some left over sugar that I tinted with food coloring left over from another dessert I made. It turned out just fine so I'm assuming if you want colored frosting now is the time to add the color. I wouldnt add too much though because I think the food coloring makes that bitter taste.
I'm just saying I dont know for sure so dont quote me on that.

There it is. Its kind of a whipped butter texture.
Now I have no tips or tricks on how to spread frosting so I just plop a glob on the top.

And spread it to the edges with a butter knife. It doesnt have to look that pretty right?
We're only gonna rip into it anyway.

Ok so here goes nothing time to taste it.

Ohh My!
This really is the BEST frosting ever.
I'm eating it and I can't believe I actually made this!
Me!
I did this!

My hubs who does not eat cake and does not like frosting either said it was good.
He's a really tough one to impress too.

Dont just take my word for it you MUST make these you MUST!

I will never buy tub frosting again!

I am so gonna be the neighborhood fav mom ;-) hehehe

ps. try the frosting refridgerated too, gives it a really cool texture

I'm baaaacckkk!!!

Hey guys! I'm back! Thanks for being so patient while I was gone and sticking around.
It was a crazy past few weeks and I'm still trying to catch up.

The Hoe Down for Hope turned out to be a great event! The best yet! I guess were getting better each year.

My friend Yvette at Kahakai posted a little about her night.
Go check out her cute lil blog here

She's sooo recruited to help us next year!

I also have to thank my friend Laurese for all the pix. Of course I didnt have a chance to take pix so I stole all these from her. She also came to my office yesterday with famed pix of all of us there! Soooo nice of her! Thanks Laurese!!!

Here was the article in our local newspaper that highlighted our event.
And here was the event on the Kauai Festivals site.

This year's theme was dancing in denim and diamonds.

The venue looked amazing! They had a holding pen for a dance floor! Too cute!
Nohelani Cypriano was a featured performer and she was just amazing!

There was train rides, picture taking, minature donkeys, silent auction, live auction, beer tasting, 4 different food stations, awards, margaritas (yay) and of course country line dancing! I had to try it, its been years...

I made a fool out of myself, but I had fun!

Even some of our county officials came out to show their support.

Look at our mayor surrounded by the ladies.

This is my dear friend Michelle who is one of the co chairs of the event.

Got a quick shot with the hubs...
and then when the crowd thinned out I tried my hand at line dancing again.

whats up with my arms?!

We had a great time, worked our butts of and best of all made money for a great cause!
