Got Pachi?


When my lil man was a baby my hubby used to call him his little pachi.
Pachi, which is short for Menpachi a red squirl fish.
They make sort of a grunting squeeky sound when you catch them... and oh are they ono on the grill... menpachi, not ono, just delicious.

(i appologize if thats too much local slang and you dont get the joke)

This past weekend the hubs went to a fishing tournament.
When he came home on Sunday, my son was so happy... not to see daddy who had been gone all weekend long but to see the fish that daddy brought home.

He grabbed his cooler and thought he was going fishing with daddy.
He was disapointed that he didnt get to go but he totally forgot about it when he saw the menpachi that daddy brought home for mommy.


Thats all he talks about is fishing and fish and fishing pole!



Even when he's on the potty he pretends to fish for sharks in the bowl.


Hmmmm which one to eat?

I'm back from a break and with Hoo are You no. 41

I took a little break from blogging to just well catch up with life.
Work has been hecktic and the hubs has been gone for a fishing tournament.

1. What type of diamond cut do you like?
Ok, honestly... I have no clue what the different cuts are.
I don't even have a diamond ring, seriouslly!
I think if I would pick one out now I might pick a square. And then I just googled what they mean and now I find out it has nothing to do with the shape... gosh what kind of girl am I?!?

 
2. If you are married when is your anniversary. if not what month 
would you like to be married in?
I was married in September
3. What were or would you like your wedding colors to be?
My colors were black and gold... yes a black wedding! hahaha
4. How many bridesmaids did or would you have at your wedding?
I had 3, my bf from preschool, my bf from highschool and my sister
5. How long have you been married?
Wow this year we will be celebrating our 11th anniversary!


Nothing a little spray paint cant fix....

I inherit stuff.
It's a nice way of saying that I take other peoples crap that they dont want.

Take these stools for example.


My mom gave them to me because she doesnt use them and has no where to put them.
Don't get me wrong, we make use out of them when people come over since we only have a small 4 person table.
The only problem I have with them is that they're boring.

Spray paint to the rescue.



I had a can of Rustoleum's moss green left over from a project that never went past the thinking board, I have design ADD.


Just a quick spray and a new look!

Cheesy Bacon Bread

Damn you blogger... I had this post all ready to go, I was actually on it and keeping up with my posts and you just had to throw a wrench in it didnt you?
Oh well, life goes on and we roll with the punches right?

So last weekend we were heading out to a potluck and of course seriouslly running out of time and I had no idea what to make!

I usually dont like to experiment right before I have to actually serve it to people, I mean what if it's really bad?
Well, this recipe calls for bacon and I guess how bad can anything turn out with Bacon?
Am I right?

Ok so I got 3 cans of buttermilk biscuts, I know biscuts in a can it just sounds weird.
I cut them in quarters and put them in a bowl.


In the bowl I put two scoops of sour cream, a splash of milk and one egg all beaten togther.


Then shread a block of cheese and add to the bowl and a few green onions for some color and a bit of taste. I did not add the entire block of cheese at this point, I will never leave out cheese again! Use all of the cheese, to me cheeser is always better.


Then fry, bake, micro however you choose to cook your bacon. Just a few slices or more if you wish. I think I made 4-5 slices. Then chop them up and thow them in the bowl as well.


Toss everything together so it mixes well and the milk, sour cream and egg mixture coat the biscut pieces. At this time season to taste as well.
Pour into a greased pan and bake as the directions say on the can of biscuts.


Keep an eye on it because it may take a little longer to bake, make sure you dont under cook it or forget its in the oven while you pack your cooler and over cook it like I did.


But dont worry, with all that bacon and cheese in there, it ended up just fine!

Dinner at the Homeless Shelter and Thankful Tuesday Linky Party

I have been MIA this past week but I'm back and trying to catch up.
Lets see... what have I been up to...

Last week Friday my dad and I went to the transitional housing project and brought dinner to the homeless. It was such a wonderful, humbling and fufulling experience I've had in a long time.

We brought a huge pot of Portuguese Bean Soup, warm dinner rolls with butter, lemonaid and even cookies for dessert. The people in the shelter were all so nice and appreciative.
There was a woman and her child, very smart boy and very polite and it just broke my heart as a mother. Sometime you really have to slow down from your busy life and do something for someone who is less fortunate.

Life can be tough and we're all struggling in our on way and fighting our own battle. When you take the time to think about what you have and what others don't life doesnt seem that bad anymore.

I went home and even if it was messy I was glad to have my home. I took a hot shower and thanked God that I had the chance to do so. I went to work the next day, happy and greatful that I had a job to go to that helps me to pay my mortgage.

So, as every  most Tuesdays, I ask you all, what are you thankful for?
It doesn't have to be a story like mine, it can be as easy and simple as Im thankful I finally finished my project, I'm thankful I didnt get a ticket whatever it is share it with us.

And one more thing... I'm thankful for all 'yall who take the time to stop by and check out my ramblings.

One Tequila, Two Tequila, Three Tequila... FLOOR

Ok, this post actually has nothing to do with Tequila, but it caught your eye didnt it?

Ok maybe one thing to do with Tequila...



Mmmmm... margaritas on Cinco De Mayo!
We had a little girls night out, so much fun and I come to realize that mama needs a night off more often!

But anyway... the real reason for this post...
A while back I mentioned about our flooring problem.
We are finally close to a solution.
After talking to the Department of Health I emailed our developer and hmmm... go figure mention the DOH and wow all of a sudden they have an offer for us.
They offered to have a contractor of their choice put in new linoleum of their choice free of charge... uh I don't think so! Look where their contractor of choice and flooring of choice has gotten us. The second offer they made was a cash settlement. Its not a lot, and hopefully it covers our expenses, but atleast its something and I can finally afford to do something about our flooring problem.

So the hubs and I took a little trip to Home Depot to check out their selection of tile... a very small selection of tile might I add.

He picked this one:


It's a 12" X 12" tile, I like the color but I was kinda hoping for a larger tile.

I kinda liked this one:




The only thing is that the colors vary from tile to tile soooo much!
I do prefer the color of the one the hubs chose, just if it was a tad lighter.

So what do you guys think? Any suggestions?

It's a Mother's Day edition of Hoo are you...
1. Are you a mom and if so how many kids do you have?
 
Yes, I'm a mom to a terrible two year old boy going on 13.
(and a 34 yr old going on 2)


2. List 3 qualities that you love about your mom.

Gosh, for those that know me, know that I have a difficult relationship with my mom. All that we've been through, we're probably at the best our relationship has ever been.
I think my mom has a great heart and she always means well. She doesnt have the best execution but she does want the best for the ones she loves.

3. What is your fav thing your mother cooks.
 
This one makes me laugh because growing up she never cooked and if she did... well lets just say that she would burn food, never cook. But I guess when she got older she learned how to cook.
She makes a pretty good fried chicken, not better than my grandma, no one makes better than my grandma but her's is pretty good. She makes good creative pastas too.

4. What do you love about being a mom?
 
Wow, how do you describe this one? I love the little human being that thinks the world of you, thinks the world is crashing when you scold them and thinks you saved the world when you hug and kiss them. The love is undescribible. Not to mention the headaches as well! LOL
 
5. What are your plans for Mother's Day?
 
I dont have any plans for mothers day. I would love to have brunch but I dont want to go out to a restaurant. Maybe spend a relaxing day with my loves at the beach.
Hmmm... or maybe a pedicure, yea thats sounds good
